Chillies are popular in many countries, but Mexico enjoys them the most. Mexican peppers have been used for thousands of years as an ingredient in Mexican dishes. There are about 140 different types of chilies grown in Mexico. People tend to shy away from chilies because of their powerful heat when eaten, but not all chilies are unbearable to many.

Mexican peppers are a popular Mexican food used in foods. It is used to add flavor to vegetables, and meats. Another Mexican spice is popular is Chipotle. It is made from Jalapenos that have been dried and smoked. The flavor is one of a kind and goes well with many dishes. It is gaining popularity outside of Mexico. One other type of chile pepper is Ancho. It is different from the other peppers because it has a sweet flavor similar to dried fruit.

Some Mexican spices used in cooking are Cumin, and Oregano. Mexican dishes that include tomatoes are perfect with oregano. It gives the dish an earthy flavor. Cumin gives Mexican dishes a taste that cannot be matched. Cumin takes three to four months of a long summer to grow. Cumin is a dry seed from the herb Cuminum Cyminum which is a member of the parsley family. This spice is the key component in curry power and chili powder. Cumin can also be boiled and served as a tea which is called “cumin cider”. Cumin is a spice that has been used for many centuries and will continue to be used by the people of Mexico.

Another pepper that is found in healthy mexican food is the Fresno pepper. It looks like a smaller version of a sweet green pepper. You can find them in guacamole and also in dishes that include black beans. Chipotle peppers are another pepper found in Mexico. It is gaining popularity in the United States. It is actually Jalapeno peppers that are dried by being smoked. They add a smoky flavor to dishes. One other pepper is the Serrano. They are bright green in color with a very spicy hot taste. They are often used in salsa.

You can find dishes using different popular Mexican chiles such as chilate. Chilate is a drink that includes chile peppers, chocolate, and toasted ground corn with water. Another food is Chilis en nogada. It consists of green peppers that are stuffed and fried and covered with cream and pomegranate seeds.

If you want to try some Mexican spices from your home, they are available at major grocery stores. You can even make your own blend of Mexican spices. Gather a few of the mentioned spices in this article, along with paprika and salt, and blend them together for a sensational burst of flavor. This is a great blend in chili. It can be added to foods that are baked, broiled and barbequed. It is perfect on chicken and pork. It is an excellent addition for your next barbeque. Let the grilling begin!

There are a dozen reasons which could help make a city great for food. Whether it is the restaurant itself, the food, the staff, the location and even the decor inside the building itself.

There are numerous places that come in to mind when thinking of lavish, 5-star rated restaurants. Paris would obviously be a first choice for many people when thinking of fancy food and over priced restaurants yet is this city past its best? Going for a nice meal shouldn’t be like going to Church and that is what a lot of Paris is like. London is not quite there yet with the street food. For example, New Delhi, Bangkok and Hanoi have an abundance of all sorts of different and wonderful food which you can try at your own risk! New York is always a potential for the best culinary city in the world but it lacks in its range of foreign cuisines that are so recurrent in other countries. I think that the best city for food needs to show a history of culinary excellence and elegance therefore cities like Las Vegas and Cape Town could not be in the mix.

Another important aspect to consider is what the city is like for indian takeaways food and food delivery as a lot of money can be made out of this. A good city will provide good quality Indian takeaways and Chinese takeaways at any time of the night. Go and find that idyllic late night indian restaurant, this is only my opinion but these things matter a great deal. Many different things are pulled together to make a city a hub for exquisite food. From my experience the one city that can provide the very best of almost every cuisine would have to be Osaka, Japan. This Is a city entirely at ease with its culinary identity but completely open to foreign influences.

How to Cook Pasta

Luchen Kugel also known as Jewish Noodle Pudding, is an absolute favorite in most Jewish homes. Mothers teach their daughters, then daughters teach their daughters and the technique of making the best Luchen Kugel proceeds down family lines, including today, teaching sons.

I usually make spaghetti sauce from scratch, but when I’m pressed for time, I buy the healthiest kind I can find. I look for the sauce with the least amount of salt and high fructose corn syrup. My family likes sauce with the meat incorporated into it. Every so often, however, I make meat balls. We like small ones, not the huge kind that contain too much bread and hit your stomach like a rock.

Preheat oven to 350 degrees.

Saute beef, bell pepper, and onion in a skillet for 10 minutes or until the beef is browned and the veggies are crisp tender. Drain. Return mixture to the pan and add the tomatoes, tomato sauce, chili powder, salt, and pepper. Stir and set aside. In a 13 x 9-inch baking pan, arrange a layer of lasagna noodles. Put a layer of the meat mixture then a layer of cheese over the noodles. Repeat the layers, ending with cheese. Bake at 350 degrees for 40 minutes or until heated through and bubbly.

Directions:

1. Boil the noodles in salt water until done.

2. Drain the noodles then run hot water over them and drain well again.

3. Melt butter or margarine in flat casserole dish. I prefer much more butter than I have indicated above, so play with it. You might like it real buttery, too.

4. Put all of the noodles in a bowl and add half of the melted butter or margarine.

5. Beat the egg and pour mixture over the noodles, stirring well.

6. Add sugar and raisins to taste, and if you like, add some chopped apples.

7. Stir well, taste again and adjust the taste to your liking if you need to.

8. Pour the mixture into a flat casserole dish you have lightly greased with oil or butter.

9. Bake at 350 degrees for 1 / 2 hour until golden and crusty. If it isn’t crusty enough, put it back into the oven a while longer and check regularly until the crust is the way you like it.

To Freeze: Prepare pan by lining with aluminum foil. Then proceed as above. When thoroughly chilled, wrap pan completely in foil, seal and freeze.

To Prepare Frozen Dessert for Eating: Remove outer wrapping of foil. Let stand 1 1/2 hours in refrigerator before serving.

Enjoy

Chinese Cooking Tips

Can you believe that an independent Sicily would rank seventh in the world for wine production? And Sicilians really love their desserts. The best-known Sicilian dessert wine is Marsala. This was once considered a great sweet wine and if you’re careful you may find a good one. Avoid Marsala cooking wines like the plague, even for cooking. Remember, in Sicily and elsewhere, most dessert wines are sold in half-liter bottles.

Panettone is a classic Italian Christmas cake. The Lombardy version is said to be the best and the hardest to make. To do it right, use baker’s yeast. Among the ingredients are egg yolks, melted butter, raisins (soak them and squeeze them dry), butter, and diced candied orange and lemon rinds. Italian bakeries should carry this delicacy at Christmas time. Suggested wine pairings include the red fizzy or sparkling Acqui/Brachetto d’Acqui DOCG from neighboring Piedmont (if you can find it), Asti, and Moscadello di Montalcino DOC.

Alternatively you can rent, this is actually the option most people go for, because as great as pig roasters are for a BBQ, cooking one does involve a little more prep than for your standard BBQ, so most tend to use them only for particular occasions. If renting you can usually go for the pig roaster on its own, where you do all the work at home, or at a little more expense you can get someone to turn up at your house with the roaster, do all the cooking and carving and then take everything away again, it’s up to you and your budget.

Cotognata (Quince Preserve) is a traditional Sicilian dessert, often made in the shape of a leaf or a fish. Don’t forget to add lemon and sugar. Recommended wine pairings include Moscato di Pantelleria DOC, Moscato di Siracusa DOC, and Moscato di Trani DOC.

Panzerotti ai due Formaggi (Cheese Panzerotti) are honey-coated pastry half moons whose secret is two special Italian cheeses, grated Pecorino Siciliano and a smaller amount of cubed Cacioavallo Silano. It also calls for flour, butter, orange and lemon rinds, and olive oil. Serve them hot with one of the above wines or a Sicilian Moscato di Noto DOC. You might look for the Planeta name on the label

Famous Louisiana Chef John Folse is a deep, warm voice. And when he speaks about Louisiana food, there’s no doubt where his heart is.

“Eating in Louisiana is a faith ; it is not just about nutrition,” Cook Folse claims. “It’s an in-gathering ; it’s celebratory ; it is a prayer of thanks for all we have been in possession of from the swamp.”

John Folse grew up just east of the Atchafalaya Swamp and lost his mother as a young boy. His pa raised six boys and two girls as a single parent. One of the things Mr. Folse felt he wanted to teach his children was to be good cooks.

And their first lesson was that only the hottest foods yield their true flavours. “He truly taught us to refuse anything less than great taste,” Chef says.

To serve the freshest foods, you need to know what’s in season. “When it’s brown shrimp season, you eat brown shrimp. When it’s white shrimp season, you eat white shrimp. When it’s strawberry season, you eat strawberries,” Cook giggles.

Locals call brown shrimp season Bonne Crevette-translation, good shrimp! The season begins in May and runs till fall. Even during Bonne Crevette, you need to know how to select the absolute best quality.

Well-taught cooks only purchase full, in-shell, raw shrimp when they are shown on a thick bed of fresh ice-not melting-under a cover. The shrimp meats must be firm to the touch, not soft. The shells must be translucent and moist, not lifeless or dry.

Learning to capture the legendary taste of brown shrimp also implies learning a sense of timing. “A lot of people are worried they will undercook shrimp,” Cook asserts, “but the genuine crime would be to overcook it and boil out all the flavour and texture.”

Follow these tips and your shrimp are certain to yield their true Louisiana flavors.

So, celebrate Bonne Crevette with Cook Folse’s Shrimp Scampi. “Try this dish. It’s an easy, traditional shrimp recipe. And it’s one of my favorites.”

Chef explains that though scampi is a term used some place else to explain a species of shrimp, in America it refers to an Italian dish. This simple recipe is superb when served over pasta, fish or chicken.
